A delicious healthy way to start the autumn with a seasonal vegetable soup
As we are on our way to winter we are thinking about something warm for lunch or a starter for dinner.
This wonderfully light soup recipe is perfect to take to work for your lunch.
Ingredients
2 leeks
1/2 bunch spring onions
1 bunch asparagus sliced into 1/2 cm pieces
1/4 cauliflower broken into florets
hand ful fresh green peas (frozen peas are just as nutritious)
handful green beans
4 sticks celery
Method
Heat oil and unsalted butter in a pot
Add clean sliced leeks, to pot with the thyme and gently saute until soft,add finely sliced celery. sliced zuchiniand spring onions.
Add approx 1 litre of chicken or vegetable stock,simmer until slightly tender.
Then add the beans,peas,and asparagus,cauliflower keep simmering for about another 10 mins when nearly cooked add the spinach, and serve with freshly chopped parsley.salt and pepper to taste
Note- you can add more vegetables or stock if you wish
